Date Sweetened Peanut Butter Cups

9 Dates

⅓ cup peanut butter or almond butter

2 tablespoons cacao powder

2 tablespoons coconut oil

1 cup almond milk

Pinch of sea salt

Soak 3 of the dates in warm water for 10 minutes. Drain and save a few tablespoons of the soaking liquid. Blend dates and saved water in a food processor for a few minutes. Add in peanut butter and a tablespoon of coconut oil. Process until well-combined. Set aside.

In a small saucepan combine the rest of the dates, cacao powder, and almond milk. Simmer for 10 minutes. Blend in a high speed blender or food processor and add in a pinch of sea salt.

Line a mini-muffin pan or regular muffin pan with muffin cups. Add enough chocolate into each cup to just fill the bottom. Set in freezer for 30 minutes. Next add in a tablespoon of the peanut butter and date mixture and top with chocolate. Put back into the freezer for about an hour. Enjoy. Best to keep in the freezer.
